In the heart of the ever-popular Birkdale Village, eeZ Fusion & Sushi is being heralded as the spot for the freshest, most creative and innovative sushi for miles around. eeZ offers sashimi, nigiri and basic rolls, but goes a step further by implementing the use of "non-traditional" fresh meats and vegetables on its specialty rolls. Rifali Almunir
Head Sushi Chef

Rifali began preparing sushi over a decade ago as a teenager in his hometown of Jakarta, Japan. He began to master his craft under Master Sihimato, Indonesia's finest chef, in a Japanese-themed restaurant that fused cuisines of Japan, China, Indonesia and France. After five years under Master Sihimato, his next move found him as Lead Chef at the Grand Hyatt Jakarta, the largest international hotel in the capital of Indonesia.

After nine years with the Hyatt, Rifali's family moved to the United States where he has utilized his skills in various restaurants, most recently as the top sushi chef at Tsunami Japanese Steakhouse.

Rifali specializes in creative raw and cooked fusion combinations, and only adheres to the strict standards regarding product freshness, quality and presentation.


Darnell Bennett
Head Chef

Darnell, a North Carolina native, was born and raised in Monroe. He started in the restaurant business at the tender age of 15, as a dishwasher and bus boy. In 1999, he chose to join the U.S. Navy, and spent the next two years traveling and working as an electronic technician. After leaving the Navy, he came on board with Alan Springate, working various front, and back of house positions with a local CiCi's Pizza establishment. Darnell spent the next years honing and mastering his skills, working service and management positions in a variety of operations and restaurant formats. Darnell was introduced to Marcus through another restaurant concept, and had the life-changing opportunity to help open eeZ Fusion & Sushi. Darnell has been a valued part of the eeZ family since day one. He brings to the kitchen a level of professionalism, heart and intensity that is only seen in the best chefs.


Mike Foster
General Manager

Mike Foster, a Michigan native, started his career in the restaurant business over 16 years ago. In his early years, he was hired as a dishwasher for a local chef-owned restaurant, and quickly moved through the ranks of the back of the house. Mike attended college at the Johnson and Wales University in Charleston, South Carolina. After graduating in 2001, he was eager to make the switch to the front of the house. Mike then moved to Atlanta to take a position with a well-known restaurant, Pappadeaux Seafood Kitchen. Mike spent his years with Pappadeaux learning as much as he could about the hospitality industry. He then made the move to Phoenix, Arizona, where he began to hone his management and training skills, working with various resorts and restaurants in the Phoenix area. Mike, and his family, made the move to the Carolinas in early 2010, and decided to join the eeZ Fusion & Sushi family. His wide range of skills and knowledge, and his infectious personality make him a huge asset to eeZ. His signature phrase, and one you can hear echoing through the dining rooms with eeZ is: "Dominate!".


Marcus Hall
Owner

Marcus is a North Carolina native, born and raised in Raleigh. Marcus began his journey in the restaurant business at age 16, as a dishwasher and busboy with a regional restaurant chain. Throughout the remainder of high school and as a student at North Carolina State University, he worked every position imaginable in the business with various restaurant formats ranging from fast casual to fine dining. Working kitchen, service and management positions in North Carolina, Georgia, Virginia, and for a year stint overseas in Scotland, Marcus developed a passion for providing great guest service. Living and breathing a "guest is king" mentality helped keep him focused on a daily basis, and opened up an opportunity for a new challenge in 2005. Marcus opened an American-Asian fusion concept in February, 2005. Birkdale Village provided a perfect location to operate with this menu variety, and listening to the overwhelming feedback from guests that sushi would be a great complement he made a drastic format change in late 2006. eeZ Fusion & Sushi opened with the addition of a fresh rolled to order sushi bar which proved to round out a concept already thriving off of a unique American-Asian menu blend. Marcus is committed to continuing the evolution of the concept, sticking to the "all fresh ingredients" format that has helped gain eeZ Fusion & Sushi the success it enjoys today.
